Founded in 2005 by Henrik and Yulia Winter, the holding runs four restaurant concepts: Osteria Mario, Bar BQ Cafe, the Georgian bistro Shvili and the coffee-and-wine bar Zest Coffee&Wine. It has its own mobile app and a franchise programme, and since 2015 the Tigrus Project charity for Amur tiger conservation.
What we did
- 01Built a shared procurement loop across four concepts: overlapping lines consolidate into one order while each concept keeps its own menu specifics.
- 02Tuned the 86 list to different cuisines — an osteria and a Georgian bistro turn stock over at different speeds and react differently to weekends.
- 03Connected the holding’s mobile app to the guest profile: an app order and a floor visit stopped being two different people in the system.
- 04Built a like-for-like site comparison inside each concept — a manager sees where their venue trails a comparable one, not a holding-wide average.
